Description

Experience the smoky depth of flavor that only a Traeger grill can impart on sweet corn. This recipe combines the richness of melted butter with fresh cilantro, garlic powder, and a sprinkle of cotija cheese, creating a delightful side dish that’s perfect for summer barbecues or any grilled meal.


Ingredients

  • 5 ears corn, husked and silks removed

  • ¼ cup butter, melted

  • 1 tablespoon fresh cilantro, chopped

  • ¼ teaspoon garlic powder

  • ½ teaspoon salt

  • ⅛ teaspoon black pepper


Instructions

  • Preheat your Traeger grill to 225°F (107°C).

  • In a small bowl, mix together the melted butter, chopped cilantro, garlic powder, salt, and black pepper.

  • Brush half of the butter mixture evenly over the husked corn.

  • Place the corn directly on the grill grates.

  • Smoke the corn for 25 minutes, then flip each ear and brush with the remaining butter mixture.

  • Continue smoking for an additional 20 minutes, or until the corn is tender and easily pierced with a fork.

 

  • Remove the corn from the grill and sprinkle with crumbled cotija cheese before serving

Notes

For added flavor, consider sprinkling the corn with chili powder or a squeeze of lime juice before serving.

If you prefer a stronger smoky flavor, increase the smoking time slightly.
