Instructions

In a large saucepan, combine pineapple, jalapeños, apple cider vinegar, sugar, and lemon juice.

Bring mixture to a boil over medium-high heat, stirring frequently to dissolve sugar.

Reduce heat to medium-low and simmer gently, stirring occasionally, until mixture thickens and becomes syrupy—about 45–60 minutes.

Test thickness by placing a small spoonful on a cold plate; it should hold its shape and not run.

Remove from heat and let cool slightly before spooning into sterilized jars.
