Description

Sweet, spicy, and tangy, this Pineapple Cowboy Candy is a flavorful jalapeño-pineapple chutney that’s perfect as a condiment or gift. Loaded with fresh pineapple, jalapeños, and a balanced blend of sugar and vinegar, it’s a deliciously addictive treat for sandwiches, cheese boards, and more.


Ingredients

  • 3 cups diced fresh pineapple

  • 1 cup thinly sliced jalapeño peppers (remove seeds for less heat)

  • 1 cup apple cider vinegar

  • 2 cups granulated sugar

  • 2 tablespoons lemon juice


Instructions

  • In a large saucepan, combine pineapple, jalapeños, apple cider vinegar, sugar, and lemon juice.

  • Bring mixture to a boil over medium-high heat, stirring frequently to dissolve sugar.

  • Reduce heat to medium-low and simmer gently, stirring occasionally, until mixture thickens and becomes syrupy—about 45–60 minutes.

  • Test thickness by placing a small spoonful on a cold plate; it should hold its shape and not run.

  • Remove from heat and let cool slightly before spooning into sterilized jars.

 

  • Store in the refrigerator for up to 3 months.

Notes

Adjust the number of jalapeños depending on your heat preference.

Use fresh pineapple for the best flavor; canned pineapple may add excess liquid.

Great served with cream cheese, grilled meats, or on sandwiches.

Ensure jars are sterilized properly for longer shelf life if gifting
