Sweet, tangy strawberry filling nestled between a buttery oat crumble crust—these bars make a perfect breakfast treat or dessert with a fresh, fruity twist.
Ingredients
Crust:

¾ cup (95g) all-purpose flour

1 cup (100g) rolled oats

½ cup (100g) light brown sugar

½ tsp baking powder

¼ tsp salt

½ cup (113g) unsalted butter, room temperature

1 tsp vanilla extract
Strawberry Filling:

10 oz (300g) fresh strawberries, hulled and chopped

2 tbsp (30g) sugar

1 tbsp (8g) cornstarch

Zest of 1 lemon
Instructions

Preheat oven: to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

Make the crust: In a bowl, combine flour, oats, brown sugar, baking powder, and salt. Add butter and vanilla extract, mixing until crumbly but holds together when pressed.

Press 2/3 of crust mixture evenly into the prepared pan to form the base. Bake for 10 minutes until lightly golden.

Prepare strawberry filling: In a bowl, toss strawberries with sugar, cornstarch, and lemon zest until coated.

Spread filling evenly over the partially baked crust.

Crumble the remaining crust mixture over the strawberry layer.

Bake for 25–30 minutes or until the topping is golden and the filling is bubbly.

Cool completely before slicing into bars.
Notes
Use fresh or frozen strawberries (thawed and drained).
Swap strawberries for mixed berries for variety.
Store in the fridge; best eaten within 3 days.
