Description

These delightful no-bake strawberry cheesecake bites offer a creamy, tangy filling nestled inside fresh strawberries, topped with a graham cracker crumble. Perfect for parties, picnics, or a sweet snack!


Ingredients

  • 24 fresh strawberries (about 1½ lbs)

  • 1 (8 oz) package cream cheese, softened

  • 2 tablespoons sour cream

  • ¼ cup powdered sugar

  • 1 teaspoon fresh lemon juice (from 1 lemon)

  • ½ teaspoon vanilla extract

  • 8 oz white chocolate, chopped (optional)

  • 2 whole graham crackers


Instructions

  1. Wash and hull the strawberries, creating a small cavity in each.

  2. In a mixing bowl, combine softened cream cheese, sour cream, powdered sugar, lemon juice, and vanilla extract. Mix until smooth.

  3. Fill each strawberry with the cheesecake mixture using a spoon or piping bag.

  4. If using, melt the white chocolate and dip the bottom of each filled strawberry into the chocolate. Place on parchment paper to set.

  5. Crush the graham crackers and sprinkle over the tops of the filled strawberries.

  6. Refrigerate for at least 30 minutes before serving.

Notes

For a healthier version, substitute white chocolate with dark chocolate or omit it entirely.

Ensure strawberries are firm and ripe for the best texture.
