These Smash Burger Tacos combine everything you love about a juicy, crispy-edged smash burger with the convenience and portability of a taco. Cooked directly onto flour tortillas for a crunchy bite and topped with creamy, tangy burger sauce, these are perfect for cookouts, weeknight dinners, or game days.
Ingredients
For the Smash Burger Tacos:

1 pound ground beef (80/20 fat ratio)

1 teaspoon kosher salt

10 cracks fresh black pepper (or to taste)

6 (six-inch) flour tortillas

6 slices muenster or provolone cheese

Shredded lettuce (for topping)

Chopped white onion (for topping)

Dill pickle chips (for topping)
For the Burger Sauce:

1/2 cup mayonnaise

1 teaspoon paprika
-
1/2 teaspoon onion powder
-
1/4 teaspoon garlic powder

1/2 teaspoon mustard

2 tablespoons minced bread & butter pickles
-
1 tablespoon pickle brine
-
10 cracks fresh black pepper
-
1/4 teaspoon Worcestershire sauce
Instructions

Make the Burger Sauce:
In a small bowl, mix together mayonnaise, paprika, onion powder, garlic powder, mustard, minced pickles, pickle brine, black pepper, and Worcestershire sauce. Stir until well combined. Set aside. -
Prepare the Smash Burgers:
Divide the ground beef into 6 equal portions (about 2.6 oz each). Flatten each portion into a ball. -
Cook:

Heat a large skillet or griddle over medium-high heat.

Place a tortilla on the hot surface. Immediately press a beef ball onto the tortilla and smash flat using a spatula or burger press.

Season with salt and pepper.

Cook for about 2–3 minutes, then flip and place a slice of cheese on the cooked beef side. Cook another 1–2 minutes until the cheese melts.

Assemble:
Remove from heat. Top each taco with shredded lettuce, chopped white onion, pickle chips, and a drizzle of burger sauce. -
Serve:
Serve hot, optionally with fries or chips on the side.
Notes
Use flour tortillas, not corn—they hold up better and allow the meat to stick while cooking.
Add sliced jalapeños or hot sauce for a spicy version.
You can substitute cheddar or American cheese for a more classic flavor.
