Ingredients

2 lbs yellow potatoes, cut into large chunks (about 2 inches)

1/2 medium yellow onion, cut into chunks

5 cloves garlic, minced

2 1/2 tsp dried oregano

1 tsp dried basil

1 tsp dried rosemary, crushed

Salt and freshly ground black pepper, to taste

3 lbs bone-in, skin-on chicken thighs, trimmed of excess skin

1 1/2 Tbsp olive oil

1/2 cup chicken broth
-
3 1/2 Tbsp fresh lemon juice

2 tsp lemon zest, divided

3 Tbsp fresh parsley, chopped
Instructions

Place the potato chunks and onion in the bottom of the slow cooker.

Season the chicken thighs with salt, pepper, oregano, basil, and rosemary.

Place the seasoned chicken thighs on top of the potatoes and onions.

In a small bowl, mix the olive oil, chicken broth, lemon juice, and half of the lemon zest.

Pour the mixture over the chicken and vegetables.

Cover and cook on low for 6-7 hours or until the chicken is tender and fully cooked.

Before serving, sprinkle with fresh parsley and the remaining lemon zest.
Notes
For extra flavor, marinate the chicken in the lemon-herb mixture for 1-2 hours before cooking.
Serve with a side of Greek yogurt or a fresh salad for a complete meal.
