Description

Experience the vibrant flavors of Greece with this easy slow cooker recipe. Tender chicken thighs infused with lemon, garlic, and Mediterranean herbs, served over golden potatoes.


Ingredients

  • 2 lbs yellow potatoes, cut into large chunks (about 2 inches)

  • 1/2 medium yellow onion, cut into chunks

  • 5 cloves garlic, minced

  • 2 1/2 tsp dried oregano

  • 1 tsp dried basil

  • 1 tsp dried rosemary, crushed

  • Salt and freshly ground black pepper, to taste

  • 3 lbs bone-in, skin-on chicken thighs, trimmed of excess skin

  • 1 1/2 Tbsp olive oil

  • 1/2 cup chicken broth

  • 3 1/2 Tbsp fresh lemon juice

  • 2 tsp lemon zest, divided

  • 3 Tbsp fresh parsley, chopped


Instructions

  • Place the potato chunks and onion in the bottom of the slow cooker.

  • Season the chicken thighs with salt, pepper, oregano, basil, and rosemary.

  • Place the seasoned chicken thighs on top of the potatoes and onions.

  • In a small bowl, mix the olive oil, chicken broth, lemon juice, and half of the lemon zest.

  • Pour the mixture over the chicken and vegetables.

  • Cover and cook on low for 6-7 hours or until the chicken is tender and fully cooked.

 

  • Before serving, sprinkle with fresh parsley and the remaining lemon zest.

Notes

For extra flavor, marinate the chicken in the lemon-herb mixture for 1-2 hours before cooking.

Serve with a side of Greek yogurt or a fresh salad for a complete meal.
