Ingredients

1 lb shrimp, peeled and deveined

9 lasagna noodles (no-boil or regular)

2 cups milk (whole or 2%)

1 (15 oz) carton part-skim ricotta cheese

Instructions

Preheat oven to 350°F (175°C).

Cook lasagna noodles according to package directions; drain and set aside.

In a skillet, melt 2 tablespoons butter over medium heat. Add shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat and set aside.

In a saucepan, melt remaining 2 tablespoons butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, salt, pepper, garlic powder, onion powder, and oregano. Cook, whisking constantly, until the sauce thickens, about 5-7 minutes. Remove from heat and stir in 1/2 cup mozzarella and 1/4 cup Parmesan cheeses until melted and smooth.

In a bowl, combine ricotta cheese, egg, and chopped parsley. Mix until well blended.

Spread a thin layer of white sauce in the bottom of a 9×13-inch baking dish. Place a layer of lasagna noodles over the sauce. Spread a portion of the ricotta mixture over the noodles, followed by a layer of shrimp. Top with a portion of the white sauce and a sprinkle of mozzarella and Parmesan cheeses. Repeat layers, ending with a layer of noodles topped with white sauce and remaining cheeses.

Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 25 minutes, or until the top is golden and bubbly.
