Ingredients
Dough
-
¾ cup butter, softened
-
2 (3.4 oz) boxes instant pistachio pudding mix (dry)
-
½ cup sugar
-
2 large eggs
-
1½ tsp vanilla extract
-
¼ tsp almond extract
-
2 cups all-purpose flour
-
¼ tsp baking powder
-
Dash of salt
Frosting
-
4 oz cream cheese, softened
-
¼ cup butter, softened
-
2½ cups powdered sugar
-
1 tsp vanilla extract
-
¼ tsp almond extract
-
Dash of salt
-
¼ cup chopped pistachios (optional, for garnish)
Instructions
-
Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease.
-
In a large bowl, beat softened butter, sugar, and pudding mix until light and fluffy.
-
Add eggs, vanilla, and almond extract. Mix until combined.
-
In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, mixing until dough forms.
-
Spread dough evenly into the prepared pan.
-
Bake for 20–24 minutes or until edges are lightly golden and center is set. Cool completely.
-
While bars are cooling, make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, almond extract, and a dash of salt. Mix until fluffy.
-
Spread frosting over cooled bars. Sprinkle with chopped pistachios if using.
-
Chill for 10–15 minutes for cleaner slices. Cut into bars and serve.
Notes
Make sure to use instant pistachio pudding mix (not cook & serve).
Almond extract enhances the pistachio flavor — don’t skip it!
Store bars in an airtight container in the fridge for up to 5 days.
For a pop of color, add green food coloring to the frosting (optional).
