Description

Soft, chewy, and perfectly sweet, these Pistachio Pudding Sugar Cookie Bars are flavored with instant pistachio pudding mix and topped with a luscious cream cheese frosting. With a hint of almond extract and a buttery texture, they’re a dreamy treat for spring, holidays, or anytime you crave a unique dessert bar.

  • ¾ cup butter, softened

  • 2 (3.4 oz) boxes instant pistachio pudding mix (dry)

  • ½ cup sugar

  • 2 large eggs

  • 1½ tsp vanilla extract

  • ¼ tsp almond extract

  • 2 cups all-purpose flour

  • ¼ tsp baking powder

  • Dash of salt

Frosting

  • 4 oz cream cheese, softened

  • ¼ cup butter, softened

  • 2½ cups powdered sugar

  • 1 tsp vanilla extract

  • ¼ tsp almond extract

  • Dash of salt

  • ¼ cup chopped pistachios (optional, for garnish)


Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease.

  2. In a large bowl, beat softened butter, sugar, and pudding mix until light and fluffy.

  3. Add eggs, vanilla, and almond extract. Mix until combined.

  4. In a separate bowl, whisk flour, baking powder, and salt. Gradually add dry ingredients to wet mixture, mixing until dough forms.

  5. Spread dough evenly into the prepared pan.

  6. Bake for 20–24 minutes or until edges are lightly golden and center is set. Cool completely.

  7. While bars are cooling, make the frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, almond extract, and a dash of salt. Mix until fluffy.

  8. Spread frosting over cooled bars. Sprinkle with chopped pistachios if using.

  9. Chill for 10–15 minutes for cleaner slices. Cut into bars and serve.

Notes

Make sure to use instant pistachio pudding mix (not cook & serve).

Almond extract enhances the pistachio flavor — don’t skip it!

Store bars in an airtight container in the fridge for up to 5 days.

For a pop of color, add green food coloring to the frosting (optional).
