Description

A vibrant salsa that marries the sweetness of ripe pineapple with the smoky heat of chipotle peppers. Perfect for pairing with tortilla chips, grilled meats, or as a zesty topping for tacos.

Ingredients

  • 1 medium fresh pineapple, peeled, cored, and diced

  • 1/2 cup finely diced red onion

  • 1/2 cup diced roasted red bell pepper (from a jar)

  • 1 chipotle pepper in adobo sauce, finely chopped

  • 2 tablespoons fresh lime juice

  • 1 tablespoon honey

  • 1 teaspoon freshly grated gingerroot

  • 1/4 teaspoon salt

Instructions

  • In a large bowl, combine all ingredients.

  • Mix well until evenly distributed.

  • Cover and refrigerate for at least 30 minutes to allow flavors to meld.

  • Serve chilled with tortilla chips, grilled meats, or as a topping for tacos.

Notes

Adjust the amount of chipotle pepper to control the level of spiciness.

For a smoother texture, blend the salsa to your desired consistency.

This salsa pairs wonderfully with grilled shrimp or pork dishes.
