Description

These Peppermint Gooey Bars are the perfect holiday treat! With a rich chocolate cake mix crust, a creamy, gooey filling, and a refreshing crunch from crushed candy canes, they’re an indulgent combination of chocolate and peppermint flavors.

Crust:

  • 1 box Miss Jones chocolate cake mix

  • 1 egg

  • 8 tablespoons melted butter

Filling:

  • 8 ounces softened cream cheese

  • 2 eggs

  • 2 tablespoons cocoa powder

  • 1 teaspoon vanilla extract

  • 2 cups powdered sugar

  • 3 tablespoons melted butter

  • ¼ cup crushed candy canes (about 10 mini candy canes)


Instructions

  1. Preheat the Oven:
    Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.

  2. Prepare the Crust:
    In a medium bowl, combine the chocolate cake mix, egg, and melted butter. Stir until the mixture is smooth. Press it evenly into the bottom of the prepared baking pan to form the crust.

  3. Make the Filling:
    In a large bowl, beat the softened cream cheese until smooth. Add the eggs, cocoa powder, vanilla extract, powdered sugar, and melted butter. Beat until fully combined and smooth.

  4. Assemble the Bars:
    Pour the filling mixture over the prepared crust. Use a spatula to spread it evenly.

  5. Add the Peppermint:
    Sprinkle the crushed candy canes over the top of the filling for that extra peppermint crunch.

  6. Bake:
    Bake for 30–35 minutes, or until the center is set and a toothpick inserted into the center comes out with just a few moist crumbs.

  7. Cool and Serve:
    Allow the bars to cool completely in the pan. Cut into squares and serve. Store leftovers in an airtight container.

Notes

These bars can be made ahead of time and stored in the fridge for an even gooier texture!

For an extra festive touch, drizzle with melted chocolate or top with whipped cream.
