Description

These decadent Peanut Butter Truffles are the perfect treat for any peanut butter lover. With creamy peanut butter centers, smooth chocolate coating, and just the right amount of sweetness, these bite-sized truffles are easy to make and irresistibly delicious. Perfect for gifting or satisfying your sweet tooth!


Ingredients

  • 1/2 cup creamy peanut butter (preferably Jif brand)

  • 4 Tbsp unsalted butter, softened

  • 1/2 tsp vanilla extract

  • 1/2 tsp salt (or more to taste)

  • 1 1/4 cup powdered sugar (no need to sift)

Coating:

  • 8 ounces dark chocolate chips (e.g., Nestlé Dark Chocolate Morsels)

  • 2 Tbsp coconut oil (solid at room temperature)


Instructions

  • In a medium mixing bowl, combine the peanut butter, softened butter, vanilla extract, and salt. Stir until smooth.

  • Gradually add the powdered sugar to the mixture, stirring until it forms a thick dough-like consistency.

  • Scoop out small portions of the mixture and roll them into balls about 1 inch in diameter.

  • Place the peanut butter balls on a baking sheet lined with parchment paper. Freeze for about 30 minutes to firm up.

  • While the truffles are freezing, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 20-30 second intervals, stirring until fully melted and smooth.

  • Once the truffles are chilled, dip each one into the melted chocolate, ensuring it’s fully coated. Return them to the parchment-lined sheet.

  • Freeze the chocolate-covered truffles for another 15-20 minutes, or until the chocolate is firm.

 

  • Serve and enjoy! Store any leftovers in an airtight container in the fridge.

Notes

For an extra touch, sprinkle sea salt on top of the truffles before the chocolate sets for a sweet-salty flavor.

If you don’t have coconut oil, you can substitute with vegetable oil or butter, though the texture may differ slightly.

You can use milk or semi-sweet chocolate chips if you prefer a sweeter coating.
