Decadently rich, creamy peanut butter centers coated in smooth semi-sweet chocolate—perfect bite-sized treats for any occasion.
Ingredients

6 tablespoons (85g) unsalted butter, softened to room temperature

1 cup (250g) creamy peanut butter (not natural style)

2½ cups (300g) confectioners’ sugar

½ teaspoon pure vanilla extract

1/8 teaspoon salt

12 ounces (three 4-ounce bars) semi-sweet chocolate, coarsely chopped

1 teaspoon vegetable oil (for melting chocolate)

Instructions

In a large bowl, mix softened butter and peanut butter until smooth and creamy.

Gradually add confectioners’ sugar, vanilla extract, and salt. Mix until fully combined and dough-like.

Roll the mixture into small 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for about 30 minutes to firm up.

Melt the chopped chocolate and vegetable oil together in a microwave or double boiler until smooth.

Dip each peanut butter ball into the melted chocolate, coating completely. Place back on the parchment paper.

If desired, sprinkle toppings before the chocolate sets.

Refrigerate again until the chocolate hardens (~1 hour).
Notes
Use creamy peanut butter for smooth texture.
For easier dipping, keep truffles cold.
