Description

Decadently rich, creamy peanut butter centers coated in smooth semi-sweet chocolate—perfect bite-sized treats for any occasion.


Ingredients

  • 6 tablespoons (85g) unsalted butter, softened to room temperature

  • 1 cup (250g) creamy peanut butter (not natural style)

  • 2½ cups (300g) confectioners’ sugar

  • ½ teaspoon pure vanilla extract

  • 1/8 teaspoon salt

  • 12 ounces (three 4-ounce bars) semi-sweet chocolate, coarsely chopped

  • 1 teaspoon vegetable oil (for melting chocolate)

  • Optional: sprinkles for topping


Instructions

  • In a large bowl, mix softened butter and peanut butter until smooth and creamy.

  • Gradually add confectioners’ sugar, vanilla extract, and salt. Mix until fully combined and dough-like.

  • Roll the mixture into small 1-inch balls and place on a parchment-lined baking sheet. Refrigerate for about 30 minutes to firm up.

  • Melt the chopped chocolate and vegetable oil together in a microwave or double boiler until smooth.

  • Dip each peanut butter ball into the melted chocolate, coating completely. Place back on the parchment paper.

  • If desired, sprinkle toppings before the chocolate sets.

 

  • Refrigerate again until the chocolate hardens (~1 hour).

Notes

Use creamy peanut butter for smooth texture.

For easier dipping, keep truffles cold.

Store in an airtight container in the fridge.
