4 tablespoons olive oil

1 pound chicken, cut into bite-sized pieces

14 oz smoked sausage, sliced on the diagonal

4 cloves garlic, minced

1 quart low-sodium chicken broth

2½ cups heavy cream

1 pound penne pasta, uncooked

1½ tablespoons Cajun seasoning, plus more to taste

4 oz freshly shredded Parmesan cheese, plus more as needed

Italian parsley, for garnish
Instructions

Heat olive oil in a large pot or deep skillet over medium-high heat.

Season chicken with kosher salt and pepper. Add chicken to pot and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.

In the same pot, add smoked sausage slices and cook until browned, about 3-4 minutes.

Add minced garlic and sauté for 1 minute until fragrant.

Pour in chicken broth and heavy cream. Stir to combine and bring to a gentle simmer.

Add uncooked penne pasta and Cajun seasoning. Stir to submerge the pasta in the liquid.

Cover and simmer, stirring occasionally, until pasta is tender and most of the liquid is absorbed (about 15 minutes).

Return chicken to the pot. Stir in Parmesan cheese until melted and sauce is creamy. Adjust seasoning with more Cajun seasoning, salt, or pepper if needed.
