These No-Bake Cheesecake Parfaits are a delicious and easy-to-make dessert that’s perfect for any occasion. Creamy cheesecake layers with a sweet cherry pie filling, all served in individual parfait cups. Topped with a cherry and a graham cracker crumble, these parfaits are sure to be a hit at any gathering!

6 pieces graham crackers (1 small individual pack)

8 oz cream cheese, softened

1/4 cup organic sugar

2 cups (40%) heavy whipping cream

1 can (21 oz) cherry pie filling

Canned cherries with stems (for garnish)

Pastry bag (for easy assembly)
Instructions

Prepare the crust: Crush the graham crackers into fine crumbs. You can do this by placing them in a plastic bag and using a rolling pin, or by pulsing them in a food processor. Set aside.

Make the cheesecake filling: In a large bowl, beat the softened cream cheese and organic sugar together until smooth and creamy.

In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, making sure to keep it light and fluffy.

Assemble the parfaits: Spoon a layer of graham cracker crumbs into the bottom of each parfait cup. Then pipe or spoon the cheesecake filling over the crumbs, smoothing it out with the back of a spoon.

Spoon a generous amount of cherry pie filling over the cheesecake layer, making sure to include the cherries.

Garnish each parfait with a whole canned cherry (with stem) for decoration.

Refrigerate the parfaits for at least 2 hours to allow the flavors to set.

Notes
You can add a little lemon zest to the cheesecake filling for extra flavor.
If you don’t have a pastry bag, you can use a plastic sandwich bag with the corner snipped off to pipe the cheesecake filling.
For a different topping, you can use fresh berries instead of the cherry pie filling.
