Description

These No-Bake Cheesecake Parfaits are a delicious and easy-to-make dessert that’s perfect for any occasion. Creamy cheesecake layers with a sweet cherry pie filling, all served in individual parfait cups. Topped with a cherry and a graham cracker crumble, these parfaits are sure to be a hit at any gathering!

  • 6 pieces graham crackers (1 small individual pack)

  • 8 oz cream cheese, softened

  • 1/4 cup organic sugar

  • 2 cups (40%) heavy whipping cream

  • 1 can (21 oz) cherry pie filling

  • Canned cherries with stems (for garnish)

  • 24 parfait cups

  • Pastry bag (for easy assembly)


Instructions

  • Prepare the crust: Crush the graham crackers into fine crumbs. You can do this by placing them in a plastic bag and using a rolling pin, or by pulsing them in a food processor. Set aside.

  • Make the cheesecake filling: In a large bowl, beat the softened cream cheese and organic sugar together until smooth and creamy.

  • In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, making sure to keep it light and fluffy.

  • Assemble the parfaits: Spoon a layer of graham cracker crumbs into the bottom of each parfait cup. Then pipe or spoon the cheesecake filling over the crumbs, smoothing it out with the back of a spoon.

  • Spoon a generous amount of cherry pie filling over the cheesecake layer, making sure to include the cherries.

  • Garnish each parfait with a whole canned cherry (with stem) for decoration.

  • Refrigerate the parfaits for at least 2 hours to allow the flavors to set.

 

  • Serve and enjoy!

Notes

You can add a little lemon zest to the cheesecake filling for extra flavor.

If you don’t have a pastry bag, you can use a plastic sandwich bag with the corner snipped off to pipe the cheesecake filling.

For a different topping, you can use fresh berries instead of the cherry pie filling.
