2 chicken breasts, cooked and chopped

10 oz package chopped spinach, thawed and drained

3 cloves garlic, minced (or 1 tablespoon garlic powder)

2 (10 oz) cans cream of chicken soup

6 oz French fried onions, divided (equal to one can)
Instructions

Preheat oven and prepare pasta: Preheat your oven to 350°F (175°C). Cook the spaghetti according to the package instructions. Drain and set aside.

Combine ingredients: In a large bowl, combine the cooked and chopped chicken, Monterey Jack cheese, Parmesan cheese, sour cream, beaten egg, thawed and drained spinach, minced garlic (or garlic powder), cream of chicken soup, and onion powder. Mix well until everything is evenly combined.

Mix with pasta: Add the cooked spaghetti to the bowl with the chicken mixture and stir until the pasta is well coated with the creamy sauce.

Transfer to baking dish: Pour the pasta mixture into a greased 9×13-inch baking dish, spreading it evenly.

Top with French fried onions: Sprinkle half of the French fried onions over the top of the pasta mixture. Save the remaining onions for garnish after baking.

Bake: Bake in the preheated oven for 20-25 minutes, or until the dish is heated through and the top is golden and bubbly.

Notes
You can add some cooked bacon bits or diced bell peppers for extra flavor.
If you want a lighter version, consider using reduced-fat sour cream and cheeses.
