Ingredients
For the Chicken Patties:

500g (1.2 lb) ground chicken

1 cup panko breadcrumbs

1 egg

¾ cup finely grated Parmesan cheese

1 cup finely sliced green onions (~2 stems)

2 garlic cloves, minced

½ tsp dried sage

½ tsp salt

½ tsp black pepper
For Assembling the Burgers:

2 tbsp olive oil
-
4 soft burger buns or brioche buns

1 large avocado (or 2 medium), sliced

60g (2 oz) rocket/arugula or lettuce of choice

2 tomatoes, sliced
-
4 slices Swiss cheese (or cheese of choice)

Mayonnaise, relish, ketchup, or tomato sauce (for spreading on the top bun)
Instructions

In a large bowl, combine ground chicken, panko breadcrumbs, egg, grated Parmesan, sliced green onions, minced garlic, dried sage, salt, and pepper. Mix until just combined.

Divide the mixture into 4 equal portions and shape each into a patty slightly larger than the buns.

Heat olive oil in a skillet over medium-high heat. Cook the patties for 2 minutes on each side until deep golden.

After flipping the patties, place a slice of Swiss cheese on each and cover to melt the cheese.

Toast the burger buns lightly in the skillet or oven.

To assemble, spread mayonnaise (or preferred condiment) on the bottom half of each bun.

Place the cooked patty with melted cheese on the bun, then layer with sliced avocado, rocket/arugula, and tomato slices.

Top with the other half of the bun and serve immediately
Notes
For a spicier kick, consider adding finely chopped jalapeño or poblano pepper to the patty mixture.
Ensure the avocado is firm to prevent it from mashing too much during mixing.
