Description

This Jalapeño Popper Grilled Cheese combines the creamy, cheesy goodness of a classic grilled cheese with the bold, spicy kick of jalapeño poppers! With sharp cheddar, smoky bacon, and a creamy filling, this sandwich is a game-changer for lunch or snack time. Perfectly crispy on the outside and melty on the inside.


Ingredients

  • 2 ounces cream cheese (¼ cup), softened

  • ¼ teaspoon garlic powder

  • ⅛ teaspoon kosher salt

  • 4 ounces sharp cheddar cheese (1 cup shredded)

  • 1 medium jalapeño pepper, seeds removed and thinly sliced

  • 4 slices cooked bacon (optional)

  • 4 slices hearty white, sourdough, or French sandwich bread

  • 2 tablespoons mayonnaise


Instructions

  1. In a small bowl, mix together the softened cream cheese, garlic powder, and salt until smooth and combined.

  2. Spread the cream cheese mixture on two slices of bread.

  3. Sprinkle the shredded cheddar cheese on top of the cream cheese layer. Add the thinly sliced jalapeños and bacon (if using).

  4. Top with the remaining slices of bread.

  5. Spread mayonnaise on the outside of each sandwich to ensure a golden, crispy crust when grilled.

  6. Heat a skillet or griddle over medium heat. Grill each sandwich for about 3–4 minutes per side, pressing lightly with a spatula, until golden brown and the cheese is melted.

  7. Remove from the skillet, slice in half, and serve hot.

Notes

Adjust the amount of jalapeño based on your preferred spice level—more for a hotter sandwich, or less for a milder kick.

Bacon is optional, but it adds a nice smoky crunch if you’re looking for extra flavor
