Ingredients

2 ounces cream cheese (¼ cup), softened

4 ounces sharp cheddar cheese (1 cup shredded)

1 medium jalapeño pepper, seeds removed and thinly sliced

4 slices cooked bacon (optional)

4 slices hearty white, sourdough, or French sandwich bread

2 tablespoons mayonnaise
Instructions

In a small bowl, mix together the softened cream cheese, garlic powder, and salt until smooth and combined.

Spread the cream cheese mixture on two slices of bread.

Sprinkle the shredded cheddar cheese on top of the cream cheese layer. Add the thinly sliced jalapeños and bacon (if using).

Top with the remaining slices of bread.

Spread mayonnaise on the outside of each sandwich to ensure a golden, crispy crust when grilled.

Notes
Adjust the amount of jalapeño based on your preferred spice level—more for a hotter sandwich, or less for a milder kick.
Bacon is optional, but it adds a nice smoky crunch if you’re looking for extra flavor
