Description

Crispy, golden-brown corn fritters infused with the bold flavors of jalapeño poppers—featuring spicy jalapeños, creamy cheese, and savory bacon. Perfect as an appetizer or snack, these fritters are both satisfying and full of flavor.


Ingredients

  • 2 cups fresh corn kernels (from approximately 4 ears)

  • ½ cup all-purpose flour (or corn flour, rice flour, etc.)

  • 1 large egg

  • ½ cup cheddar cheese, grated

  • ¼ cup cream cheese, softened to room temperature

  • 2+ jalapeño peppers, diced

  • 2 slices bacon, cooked and crumbled (optional)

  • 1 teaspoon smoked paprika

  • 1 teaspoon toasted and ground coriander

  • 2 green onions, sliced

  • 1 handful fresh cilantro, chopped

  • Zest and juice of 1 lime

  • 2 tablespoons oil (for frying)


Instructions

  • In a large mixing bowl, combine the corn kernels, flour, egg, cheddar cheese, cream cheese, diced jalapeños, crumbled bacon (if using), smoked paprika, ground coriander, green onions, cilantro, lime zest, and lime juice.

  • Mix until all ingredients are well incorporated. Adjust the flour quantity to ensure the mixture holds together when formed into patties.

  • Heat oil in a large skillet over medium heat.

  • Scoop about ¼ cup of the mixture and form into a patty.

  • Carefully place the patty into the hot oil and cook for 2-4 minutes per side, or until golden brown and crispy.

  • Remove from the skillet and drain on paper towels.

 

  • Serve hot, optionally topped with jalapeño popper dressing.

Notes

Adjust the number of jalapeños based on your preferred spice level.

For a vegetarian version, omit the bacon and consider adding a drop of liquid smoke for a smoky flavor.

Ensure the oil is hot enough before frying to achieve a crispy texture.
