Ingredients

2 cups fresh corn kernels (from ~4 ears)

½ cup all-purpose flour (or corn flour/rice flour for gluten-free option)

1 large egg

½ cup sharp cheddar cheese, grated

¼ cup cream cheese, softened

2 or more jalapeño peppers, diced (seeds removed for less heat)

2 slices bacon, cooked and crumbled (optional)

1 tsp smoked paprika

1 tsp ground coriander (toasted if possible)

2 green onions, thinly sliced

1 handful cilantro, chopped

1 lime, zested and juiced

Instructions

In a large mixing bowl, combine the corn, flour, egg, cheddar cheese, cream cheese, jalapeños, bacon (if using), smoked paprika, coriander, green onions, cilantro, and lime zest and juice. Mix until evenly combined.

Heat oil in a large non-stick skillet over medium heat.

Scoop about ¼ cup of batter per fritter and gently shape into patties.

Place fritters in the skillet and cook 3–4 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan—cook in batches if needed.

Transfer cooked fritters to a paper towel-lined plate to drain excess oil.

Notes
For extra crispiness, flatten the fritters slightly while cooking.
Adjust heat level by using more or fewer jalapeños, or leaving seeds in.
