½ teaspoon cornstarch

½ cup pure honey

3 tablespoons whole grain mustard (with seeds)

¼ teaspoon cayenne pepper

¼ cup packed brown sugar

Kosher salt and freshly ground black pepper, to taste

4 bone-in pork chops (1-inch thick, 8–10 oz each)
Instructions

Make the Honey Mustard Sauce:
In a small saucepan over medium heat, combine apple cider vinegar and cornstarch. Stir until cornstarch dissolves. Add honey, whole grain mustard, onion powder, cayenne pepper, and brown sugar. Stir until well combined and slightly thickened. Season with salt and pepper to taste. Remove from heat and set aside. -
Season the Pork Chops:
Pat pork chops dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper. -
Grill the Pork Chops:
Preheat the grill to medium-high heat. Grill pork chops for 4–5 minutes per side, or until internal temperature reaches 145°F (63°C). -
Glaze and Finish:
During the last 2 minutes of grilling, brush both sides of the pork chops with the honey mustard glaze. Allow it to caramelize slightly on the grill. -
Rest and Serve:
Let the pork chops rest for 5 minutes before serving. Drizzle with additional glaze, if desired.
Notes
You can use boneless pork chops, but reduce grill time to avoid overcooking.
The sauce can be made ahead and stored in the fridge for up to 5 days.
Serve with grilled veggies, mashed potatoes, or a crisp green salad.
