  • ¼ cup honey

  • 2 tbsp Dijon mustard

  • 2 tbsp whole grain mustard

  • 2 tbsp apple cider vinegar

  • 1 tbsp soy sauce (or tamari for gluten-free)

  • 2 cloves garlic, finely chopped

  • Salt and pepper to taste


Instructions

  1. Make the Marinade

    • In a bowl, whisk together honey, Dijon mustard, grainy mustard, vinegar, soy sauce, and chopped garlic.

  2. Marinate the Pork

    • Place pork chops in a resealable bag or shallow dish.

    • Pour the marinade over the chops, turning to coat. Cover and refrigerate for at least 30 minutes or up to 8 hours.

  3. Grill the Chops

    • Preheat grill to medium-high heat.

    • Remove pork chops from marinade and pat off excess (optional: reserve marinade and simmer for sauce).

    • Season chops with salt and pepper.

    • Grill 4–5 minutes per side or until internal temperature reaches 145°F (63°C).

  4. Rest and Serve

    • Let pork rest for 5 minutes before serving. Drizzle with reduced marinade or serve as is.

Notes

Tip: For extra flavor, baste with reserved marinade during grilling (boil it for 2–3 minutes first).

Alternate cooking: These can also be pan-seared or baked if a grill isn’t available.
