Description

A simple and flavorful side dish featuring zucchini slices grilled to perfection, enhanced with your choice of vinaigrette dressing and aromatic herbs. Ideal for summer barbecues or as a healthy addition to any meal.


Ingredients

  • 2 zucchini (about 10–12 inches long)

  • ½ cup of your favorite vinaigrette salad dressing (see notes)

  • 1 tsp garlic powder or minced garlic (optional, but good)

  • 1–2 tsp dried oregano, basil, thyme, rosemary, or a combination of herbs (optional)


Instructions

  • Preheat your grill to medium-high heat.

  • Slice the zucchini lengthwise into ¼-inch thick strips.

  • In a bowl, toss the zucchini slices with the vinaigrette dressing, ensuring they are evenly coated.

  • If using, sprinkle the garlic powder and dried herbs over the zucchini slices and toss again.

  • Place the zucchini slices on the preheated grill.

  • Grill for 3–4 minutes on each side, or until tender and grill marks appear.

 

  • Remove from the grill and serve immediately.

Notes

Vinaigrette Dressing: Choose a vinaigrette that complements your meal. Balsamic vinaigrette adds a sweet tang, while Italian dressing offers a herby flavor.

Herb Variations: Experiment with different herbs to suit your taste. Fresh herbs can also be used; just adjust the quantity to your preference.

Serving Suggestions: Pair with grilled meats or serve over a bed of quinoa for a light, healthy meal.
