Description
Tender grilled zucchini slices infused with olive oil, vinegar, and herbs. A light, flavorful side dish that’s quick to prepare and perfect for summer meals or healthy weeknight dinners.
Ingredients
- 
2 medium zucchini (about 8 oz each), sliced ¼ inch thick 
- 
1 tbsp extra-virgin olive oil 
- 
1 tbsp red wine vinegar 
- 
1 tsp dried parsley 
- 
1 tsp dried basil 
- 
½ tsp garlic powder 
- 
Kosher salt, to taste 
- 
Freshly ground black pepper, to taste 
Instructions
- 
Preheat a grill or grill pan over medium-high heat. 
- 
In a bowl, toss zucchini slices with olive oil, vinegar, parsley, basil, garlic powder, salt, and pepper. 
- 
Lightly oil the grill grates. 
- 
Arrange zucchini slices in a single layer. Grill for 2–3 minutes per side, or until tender and grill marks appear. 
- 
Remove from heat and serve warm. 
Notes
Try finishing with lemon juice or grated Parmesan for extra flavor.
Can be grilled outdoors or indoors using a grill pan.
