Description

Tender grilled zucchini slices infused with olive oil, vinegar, and herbs. A light, flavorful side dish that’s quick to prepare and perfect for summer meals or healthy weeknight dinners.


Ingredients

Scale
  • 2 medium zucchini (about 8 oz each), sliced ¼ inch thick

  • 1 tbsp extra-virgin olive oil

  • 1 tbsp red wine vinegar

  • 1 tsp dried parsley

  • 1 tsp dried basil

  • ½ tsp garlic powder

  • Kosher salt, to taste

  • Freshly ground black pepper, to taste


Instructions

  1. Preheat a grill or grill pan over medium-high heat.

  2. In a bowl, toss zucchini slices with olive oil, vinegar, parsley, basil, garlic powder, salt, and pepper.

  3. Lightly oil the grill grates.

  4. Arrange zucchini slices in a single layer. Grill for 2–3 minutes per side, or until tender and grill marks appear.

  5. Remove from heat and serve warm.

Notes

Try finishing with lemon juice or grated Parmesan for extra flavor.

Can be grilled outdoors or indoors using a grill pan.

Great served with grilled meats, pasta, or as a healthy side for any meal
