  • 1 tablespoon sun-dried tomatoes, chopped

  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Rigatoni:

    • Bring a large pot of salted water to a boil.

    • Add rigatoni and cook until al dente, following package instructions.

    • Drain and set aside, reserving ½ cup of pasta water.

  2. Sear the Steak Tips:

    • Season steak pieces with salt, black pepper, oregano, and thyme.

    • Heat olive oil in a large skillet over medium-high heat.

    • Add steak tips in batches, searing each side for 2–3 minutes until browned.

    • Remove steak tips and set aside.

  3. Prepare the Garlic Butter Sauce:

    • In the same skillet, melt butter over medium heat.

    • Add minced garlic and sauté for 1 minute until fragrant.

    • Return steak tips to the skillet, tossing to coat in the garlic butter.

    • Add sun-dried tomatoes and cook for an additional 2 minutes.

  4. Make the Cheesy Sauce:

    • In a separate saucepan, heat heavy cream over medium heat until simmering.

    • Stir in mozzarella and Parmesan cheeses, whisking until smooth and creamy.

    • Season with salt and black pepper to taste.

  5. Combine and Serve:

    • Add cooked rigatoni to the skillet with steak tips, tossing to combine.

    • Pour the cheesy sauce over the pasta and steak, stirring gently to coat.

    • If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    • Garnish with chopped fresh parsley.
