Description

A comforting, one-pan meal combining savory ground beef, tender rice, and sweet caramelized onions, all baked together and topped with melted Swiss cheese and crispy French fried onions. Perfect for busy weeknights or cozy weekends


Ingredients

  • 1 lb ground beef

  • 1 cup long-grain white rice

  • 2 cups beef broth

  • 1 large onion, thinly sliced

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • 1 cup shredded Swiss cheese

  • ½ cup French fried onions (for topping)

  • Fresh parsley, chopped (for garnish)


Instructions

 

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté for 10-12 minutes until caramelized and golden brown.

  3. Add ground beef to the skillet and cook until browned, about 5-7 minutes. Drain any excess fat.

  4. Season the beef and onion mixture with garlic powder, onion powder, dried thyme, salt, and pepper. Stir to combine.

  5. In a large mixing bowl, combine the seasoned beef and onion mixture with uncooked rice and beef broth. Mix thoroughly.

  6. Transfer the mixture to the greased baking dish and cover with aluminum foil. Bake for 30 minutes.

  7. Remove the foil and sprinkle shredded Swiss cheese over the top. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  8. Let the casserole rest for 5 minutes. Top with French fried onions and garnish with fresh parsley before serving.

Notes

For a lighter version, use lean ground beef or ground turkey.

Feel free to substitute Swiss cheese with Gruyère or cheddar for a different flavor profile.

This casserole can be made ahead and stored in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes
