Description

Experience the lightness and fluffiness of this cloud bread made with cottage cheese. Perfect for those on low-carb or gluten-free diets, this bread alternative is versatile enough to be used for sandwiches, burgers, or enjoyed on its own.


Ingredients

Base Ingredients:

  • 3 large eggs, separated, at room temperature

  • ½ cup cottage cheese, blended until smooth

  • ¼ teaspoon cream of tartar

  • ½ teaspoon salt

Optional Ingredients:

  • 1 tablespoon cornstarch or arrowroot powder

  • 1 teaspoon honey or sweetener


Instructions

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

  • Separate the egg whites and yolks into two bowls.

  • Add the cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.

  • In another bowl, combine the egg yolks, blended cottage cheese, salt, and optional ingredients. Mix until smooth.

  • Gently fold the whipped egg whites into the yolk mixture in thirds, maintaining as much air as possible.

  • Scoop the mixture onto the prepared baking sheet, forming 6-8 rounds.

  • Bake for 25-30 minutes, or until golden brown.

 

  • Allow to cool completely on the baking sheet before serving.

Notes

Use room temperature eggs for best volume.

Bake immediately after mixing to maintain volume.
