3 large eggs, separated, at room temperature

½ cup cottage cheese, blended until smooth

¼ teaspoon cream of tartar

Optional Ingredients:

1 tablespoon cornstarch or arrowroot powder

1 teaspoon honey or sweetener
Instructions

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

Separate the egg whites and yolks into two bowls.

Add the cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.

In another bowl, combine the egg yolks, blended cottage cheese, salt, and optional ingredients. Mix until smooth.

Gently fold the whipped egg whites into the yolk mixture in thirds, maintaining as much air as possible.

Scoop the mixture onto the prepared baking sheet, forming 6-8 rounds.
