A vibrant and satisfying Tex-Mex salad combining seasoned ground beef, crunchy Doritos, creamy dressing, and fresh vegetables. Perfect for a quick weeknight dinner or a crowd-pleasing potluck dish.
Ingredients

1 lb ground beef

1 packet taco seasoning

⅓ cup water

4 cups romaine lettuce, chopped

1 can (15 oz) black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

2 cups Doritos (Nacho Cheese flavor), broken into bite-sized pieces

½ cup Catalina dressing (or French dressing)

Optional: ½ cup sour cream for serving
Instructions

In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat.

Stir in the taco seasoning and water. Simmer for 3–5 minutes until the mixture thickens. Remove from heat and let it cool slightly.

In a large bowl, combine the chopped lettuce, black beans, cherry tomatoes, and shredded cheddar cheese.

Add the cooled beef mixture to the bowl and toss gently to combine.

Just before serving, add the broken Doritos and drizzle with Catalina dressing. Toss to coat evenly.

Serve immediately, topped with a dollop of sour cream if desired
Notes
For a lighter version, consider using lean ground turkey or substituting the sour cream with Greek yogurt.
To prevent the Doritos from becoming soggy, add them just before serving.
Feel free to customize with additional toppings like sliced olives, diced bell peppers, or avocado.
