Description
A crunchy, flavorful taco salad layered with seasoned ground beef, fresh veggies, black beans, and topped with zesty Catalina dressing and crispy Nacho-flavored Doritos — perfect for a quick, satisfying meal or party dish.
Ingredients
- 
1 lb lean ground beef 
- 
1 cup black beans, drained and rinsed 
- 
1 package taco seasoning (or homemade taco seasoning) 
- 
1 tomato, chopped (or ½ cup canned diced, drained) 
- 
1 head romaine lettuce (or preferred variety), chopped 
- 
1 cup sweet canned corn, drained 
- 
1 cup shredded cheddar cheese 
- 
½ red bell pepper, finely chopped 
- 
¾ cup Catalina dressing 
- 
2 cups nacho flavor Doritos (broken into pieces, about 80 grams) 
- 
Optional toppings: jalapeños, sour cream, cilantro, salsa, red onion, green onions, lime wedges, pico de gallo, black olives, etc. 
Instructions
- 
In a large skillet over medium heat, cook ground beef until browned and cooked through. Drain excess fat. 
- 
Add taco seasoning and water according to seasoning package instructions (usually about 2/3 cup water). Simmer until thickened and flavorful. 
- 
In a large salad bowl, combine chopped lettuce, black beans, tomato, corn, red pepper, and shredded cheese. 
- 
Add the cooked taco-seasoned beef to the salad. Toss gently. 
- 
Pour Catalina dressing over the salad and mix until well combined. 
- 
Just before serving, sprinkle broken Doritos on top to keep them crunchy. 
- 
Add any optional toppings as desired. 
Notes
Add extra veggies or avocado for more nutrition.
Serve immediately after adding Doritos to keep crunchiness.
For a vegetarian version, substitute ground beef with cooked lentils or plant-based meat alternatives.
