Description

A crunchy, flavorful taco salad layered with seasoned ground beef, fresh veggies, black beans, and topped with zesty Catalina dressing and crispy Nacho-flavored Doritos — perfect for a quick, satisfying meal or party dish.


Ingredients

  • 1 lb lean ground beef

  • 1 cup black beans, drained and rinsed

  • 1 package taco seasoning (or homemade taco seasoning)

  • 1 tomato, chopped (or ½ cup canned diced, drained)

  • 1 head romaine lettuce (or preferred variety), chopped

  • 1 cup sweet canned corn, drained

  • 1 cup shredded cheddar cheese

  • ½ red bell pepper, finely chopped

  • ¾ cup Catalina dressing

  • 2 cups nacho flavor Doritos (broken into pieces, about 80 grams)

  • Optional toppings: jalapeños, sour cream, cilantro, salsa, red onion, green onions, lime wedges, pico de gallo, black olives, etc.


Instructions

  • In a large skillet over medium heat, cook ground beef until browned and cooked through. Drain excess fat.

  • Add taco seasoning and water according to seasoning package instructions (usually about 2/3 cup water). Simmer until thickened and flavorful.

  • In a large salad bowl, combine chopped lettuce, black beans, tomato, corn, red pepper, and shredded cheese.

  • Add the cooked taco-seasoned beef to the salad. Toss gently.

  • Pour Catalina dressing over the salad and mix until well combined.

  • Just before serving, sprinkle broken Doritos on top to keep them crunchy.

 

  • Add any optional toppings as desired.

Notes

Add extra veggies or avocado for more nutrition.

Serve immediately after adding Doritos to keep crunchiness.

For a vegetarian version, substitute ground beef with cooked lentils or plant-based meat alternatives.
