A rich, indulgent dessert featuring a moist chocolate cake rolled around a creamy peanut butter filling. Inspired by the classic Buckeye candy, this roll is a perfect balance of chocolate and peanut butter, ideal for special occasions or a decadent treat.
Ingredients
For the Cake:

⅔ cup granulated sugar

¾ cup all-purpose flour
For the Filling:

2 cups creamy peanut butter

6 oz cream cheese, softened to room temperature

¼ cup butter, softened to room temperature

2 cups powdered sugar

¼ cup whole milk

½ tsp salt
Instructions

Preheat oven to 350°F (175°C). Spray a 15×10-inch jelly roll pan with cooking spray and line with parchment paper.

In a large bowl, beat eggs and sugar until thick and pale.

Add vanilla and salt, mixing well.

Sift together baking powder, cocoa powder, and flour; gradually fold into the egg mixture until smooth.

Pour batter evenly into the prepared pan and spread to edges.

Bake for 15 minutes or until the cake springs back when lightly touched.

While still warm, dust a clean kitchen towel with cocoa powder and invert the cake onto the towel. Carefully peel off parchment paper.

Starting at a short side, gently roll the cake and towel together. Allow to cool completely.
Prepare Filling:
9. In a large bowl, beat peanut butter, cream cheese, and butter until smooth.
10. Gradually add powdered sugar, then milk and salt; beat until creamy and spreadable.
Assemble:
11. Carefully unroll the cooled cake and spread the peanut butter filling evenly over the surface.
12. Re-roll the cake (without the towel) tightly.
13. Wrap in plastic wrap and refrigerate for at least 2 hours before slicing.
Notes
Use full-fat cream cheese for best texture and flavor.
Dusting the towel with cocoa powder prevents sticking while rolling.
For extra indulgence, drizzle melted chocolate over the roll before serving.
