These refreshing cucumber sandwiches are a light and delicious snack or appetizer. Made with a flavorful herbed labneh spread, they offer a creamy contrast to the crisp cucumber and soft bread.
Ingredients

1 cup labneh (homemade or store-bought)

3 tablespoons finely chopped parsley

3 tablespoons finely chopped dill

3 tablespoons chopped basil

Kosher salt (to taste)

Extra virgin olive oil (to taste)

½ English cucumber, thinly sliced

8 slices soft bread (crust removed)
Instructions

In a bowl, combine the labneh, parsley, dill, basil, and a pinch of kosher salt. Mix well to incorporate the herbs into the labneh.

Drizzle in a bit of extra virgin olive oil and stir to blend.

Lay out the 8 slices of soft bread and evenly spread the herbed labneh mixture on each slice.

Place the thinly sliced cucumber on top of the spread.

Assemble the sandwiches and cut into halves or quarters for serving.

Serve immediately or chill for a refreshing treat.
Notes
You can use store-bought labneh or make your own for a more authentic flavor.
This recipe is easily adjustable—add more or fewer herbs to your taste.
