Description

These refreshing cucumber sandwiches are a light and delicious snack or appetizer. Made with a flavorful herbed labneh spread, they offer a creamy contrast to the crisp cucumber and soft bread.

Ingredients

Scale
  • 1 cup labneh (homemade or store-bought)

  • 3 tablespoons finely chopped parsley

  • 3 tablespoons finely chopped dill

  • 3 tablespoons chopped basil

  • Kosher salt (to taste)

  • Extra virgin olive oil (to taste)

  • ½ English cucumber, thinly sliced

  • 8 slices soft bread (crust removed)

Instructions

  • In a bowl, combine the labneh, parsley, dill, basil, and a pinch of kosher salt. Mix well to incorporate the herbs into the labneh.

  • Drizzle in a bit of extra virgin olive oil and stir to blend.

  • Lay out the 8 slices of soft bread and evenly spread the herbed labneh mixture on each slice.

  • Place the thinly sliced cucumber on top of the spread.

  • Assemble the sandwiches and cut into halves or quarters for serving.

  • Serve immediately or chill for a refreshing treat.

Notes

You can use store-bought labneh or make your own for a more authentic flavor.

This recipe is easily adjustable—add more or fewer herbs to your taste.

The sandwiches are best served fresh, but can be stored for a few hours in the fridge.
