Description

A comforting and hearty soup featuring tender cheese tortellini, savory Italian sausage, and a creamy broth enriched with kale and fresh basil. Perfect for cozy dinners and meal prep.


Ingredients

  • 1 tablespoon olive oil

  • 1 pound Italian sausage, casing removed

  • 3 cloves garlic, minced

  • 1 medium sweet onion, diced

  • 2 teaspoons Italian seasoning

  • Kosher salt and freshly ground black pepper, to taste

  • 2 tablespoons all-purpose flour

  • 4 cups chicken stock

  • 1 (8-ounce) can tomato sauce

  • 1 (3-inch) Parmesan rind, optional

  • 1 (9-ounce) package refrigerated three cheese tortellini

  • ½ bunch kale, stems removed and leaves chopped

  • ⅓ cup heavy cream

  • 3 tablespoons chopped fresh basil


Instructions

  • In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.

  • Add the diced onion and cook until softened, about 5 minutes.

  • Stir in the minced garlic and cook for 1 minute until fragrant.

  • Sprinkle in the flour and stir to combine, cooking for 1-2 minutes to eliminate the raw flour taste.

  • Gradually add the chicken stock, stirring to prevent lumps.

  • Add the tomato sauce and Parmesan rind (if using). Bring the mixture to a simmer and cook for 10 minutes.

  • Stir in the tortellini and cook according to package instructions, typically 5-7 minutes, until tender.

  • Add the chopped kale and cook for an additional 2-3 minutes until wilted.

  • Reduce the heat and stir in the heavy cream and chopped basil.

  • Season with salt and pepper to taste.

 

  • Serve hot, garnished with additional fresh basil if desired.

Notes

For a vegetarian version, omit the Italian sausage and consider adding cannellini beans for protein.

This soup can be stored in the refrigerator for up to 3 days. Reheat gently, adding a splash of broth if needed.

Freezing is not recommended due to the cream and tortellini, which may change texture upon thawing.
