Instructions

In a large pot, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a spoon.

Add the diced onion and cook until softened, about 5 minutes.

Stir in the minced garlic and cook for 1 minute until fragrant.

Sprinkle in the flour and stir to combine, cooking for 1-2 minutes to eliminate the raw flour taste.

Gradually add the chicken stock, stirring to prevent lumps.

Add the tomato sauce and Parmesan rind (if using). Bring the mixture to a simmer and cook for 10 minutes.

Stir in the tortellini and cook according to package instructions, typically 5-7 minutes, until tender.

Notes
For a vegetarian version, omit the Italian sausage and consider adding cannellini beans for protein.

Freezing is not recommended due to the cream and tortellini, which may change texture upon thawing.
