Description

This creamy chicken sausage orzo skillet is a one-pan wonder packed with bold flavors and comforting textures. Spicy Italian chicken sausage brings the heat, while garlic, parmesan, and a touch of coconut milk or cream create a rich, silky sauce. Tossed with tender orzo and fresh spinach, it’s a hearty meal that’s ready in under 30 minutes — perfect for weeknights!


Ingredients

  • 1 tbsp olive oil

  • 12 oz spicy Italian chicken sausage, sliced

  • 6 cloves garlic, minced

  • 1 cup dry orzo

  • 2 cups low sodium chicken broth

  • ¼ cup full-fat canned coconut milk or heavy cream

  • 1 tbsp low sodium soy sauce

  • 1 tsp onion powder

  • ½ tsp red pepper flakes

  • ½ tsp black pepper

  • ¼ tsp salt

  • 1 tsp fresh or dried thyme

  • ½ cup freshly grated parmesan cheese

  • 2 cups baby spinach leaves


Instructions

  • Heat olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 4–5 minutes.

  • Add minced garlic and sauté for 1 minute until fragrant.

  • Stir in the dry orzo and toast lightly for 1–2 minutes.

  • Pour in the chicken broth, coconut milk (or cream), and soy sauce. Stir to combine.

  • Add onion powder, red pepper flakes, black pepper, salt, and thyme. Stir well.

  • Bring the mixture to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

  • Stir in the parmesan cheese and spinach. Cook for another 1–2 minutes until spinach is wilted and cheese is melted.

 

  • Serve hot, garnished with extra parmesan or herbs if desired.

Notes

 

Leftovers keep well refrigerated for up to 3 days.

Substitute coconut milk with heavy cream for a more traditional flavor.

Add mushrooms or sun-dried tomatoes for extra depth.
