Ingredients

8 slices of firm bread (e.g., sourdough)

8 slices of cheddar cheese

5 oz (150g) cream cheese, softened

1 tablespoon each of grated Parmesan cheese and mayonnaise (optional)

Butter, as needed for grilling
Instructions

In a small mixing bowl, combine the softened cream cheese with the grated Parmesan and mayonnaise (if using) until smooth.

Spread butter on one side of each slice of bread.

Place two slices of bread, butter-side-down, on a non-stick skillet over medium heat.

On each slice of bread, layer a slice of cheddar cheese, a dollop of the cream cheese mixture, another slice of cheddar cheese, and top with another slice of bread, butter-side-up.

Grill the sandwiches, flipping as necessary, until both sides are golden brown and the cheese is melted.

Notes
Using freshly grated Parmesan can enhance the flavor of the cream cheese filling.
