Ingredients

3 medium potatoes, peeled and diced

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon ground cumin

Salt and pepper, to taste

1 cup shredded cheddar cheese

1/2 cup sour cream

4 large flour tortillas

1/2 cup salsa or pico de gallo

1/4 cup chopped green onions (optional)
Instructions

Heat olive oil in a skillet over medium heat. Add diced potatoes, garlic powder, onion powder, cumin, salt, and pepper. Cook for 10–15 minutes, stirring occasionally, until golden and tender.

Sprinkle cheddar cheese over the potatoes. Reduce heat to low and cover until the cheese melts.

Warm the tortillas until soft and pliable.

Spoon the cheesy potato mixture into the center of each tortilla. Top with sour cream, salsa, and green onions if using.

Fold in the sides and roll tightly into burritos.

Optional: Toast the burritos in a dry skillet for 1–2 minutes per side until golden brown.

Notes
Let the burritos rest 2–3 minutes after cooking to help the filling settle.
Layer cheese inside and on top of the potato mixture for more melt and pull.
Lightly toasting the burrito seam-side down helps it stay closed and crisp.
