Description

Indulge in a savory and cheesy delight with tender chicken thighs smothered in cream cheese and herbs, all sandwiched between crispy garlic bread. This easy-to-make sandwich combines gooey melted Gruyère, juicy chicken, and the richness of garlic butter for a comforting, mouthwatering meal.

Ingredients

Scale

For the Sandwich:

  • 4 slices sandwich bread

  • 1 cup Gruyère cheese, grated

  • 4 chicken thighs, boneless and skinless

  • 2 tablespoons cream cheese

  • 200g butter, softened

  • 2 garlic cloves, minced

  • 1 handful fresh parsley leaves, chopped

  • Olive oil, for frying

  • Salt and pepper, to taste

Instructions

  • Prepare the Garlic Butter:

    • In a bowl, combine softened butter, minced garlic, chopped parsley, salt, and pepper. Mix until well incorporated.

  • Cook the Chicken:

    • Season the chicken thighs with salt and pepper.

    • Heat a drizzle of olive oil in a large pan over medium-high heat.

    • Cook the chicken thighs for about 5-7 minutes per side until golden brown and cooked through.

    • Once cooked, remove from the pan and set aside to rest.

  • Prepare the Bread:

    • Spread the garlic butter mixture generously on one side of each slice of bread.

    • Place the bread slices, buttered side down, in the same pan used to cook the chicken.

    • Toast the bread for 2-3 minutes on each side until golden brown and crispy.

  • Assemble the Sandwich:

    • Spread cream cheese on the non-buttered side of two slices of bread.

    • Slice the cooked chicken thighs into strips and layer on top of the cream cheese.

    • Sprinkle a generous amount of grated Gruyère cheese over the chicken.

    • Top with the remaining slices of bread, garlic-butter side facing out.

  • Grill and Serve:

    • Place the assembled sandwiches back into the pan and cook, pressing down slightly, for about 2-3 minutes on each side, until the cheese is melted and the bread is crispy.

    • Serve hot and enjoy!

Notes

Chicken Substitution: You can use boneless chicken breasts if preferred, but thighs offer more flavor and juiciness.

Garlic Bread Option: For an extra kick, add a pinch of red pepper flakes to the garlic butter mixture.

Leftovers: This sandwich is best enjoyed fresh, but any leftover chicken can be stored for up to 2 days and reheated as a snack or topping for a salad.
