Description

Deliciously sweet and rich, these cheesecake bars are made with a buttery graham cracker crust, a smooth butterscotch filling, and a creamy cheesecake topping. They’re a decadent treat perfect for any occasion!


Ingredients

  • 11 ounces butterscotch chips

  • ½ cup unsalted butter

  • 2 cups graham cracker crumbs

  • 8 ounces cream cheese, very well softened to room temperature

  • 1 large egg

  • 1 (14-ounce) can sweetened condensed milk

  • 2 teaspoons vanilla extract

  • ½ teaspoon salt


Instructions

  • Preheat your oven to 325°F (163°C).

  • In a saucepan, melt the butterscotch chips and butter over medium heat, stirring frequently until smooth. Remove from heat and set aside.

  • In a medium-sized bowl, combine the graham cracker crumbs and a pinch of salt. Add 4 tablespoons of the butterscotch mixture and stir until evenly combined.

  • Press the graham cracker crumb mixture into the bottom of a greased 9×9-inch baking dish to form an even crust. Bake in the preheated oven for about 10 minutes, then remove and let it cool slightly.

  • In a large bowl, beat the softened cream cheese until smooth.

  • Add the egg, sweetened condensed milk, vanilla extract, and the remaining butterscotch mixture. Mix until smooth and well combined.

  • Pour the cheesecake mixture over the prepared graham cracker crust.

  • Bake for 25–30 minutes, or until the center is set and the edges are lightly golden.

  • Let the bars cool to room temperature before refrigerating for at least 2 hours to set completely.

 

  • Cut into squares and serve chilled.

Notes

For an extra layer of flavor, sprinkle some chopped butterscotch chips on top before baking.

These bars can be stored in the fridge for up to 5 days, or frozen for longer storage.

If you don’t have butterscotch chips, you can use caramel chips or white chocolate chips for a variation.
