11 oz butterscotch chips

½ cup unsalted butter

2 cups graham cracker crumbs

8 oz cream cheese, very well softened

1 large egg

1 (14 oz) can sweetened condensed milk

2 tsp vanilla extract

½ tsp salt
Instructions

Preheat oven to 350°F (175°C). Grease or line an 8×8-inch or 9×9-inch baking pan with parchment paper.

In a saucepan over low heat, melt butterscotch chips and butter, stirring until smooth. Remove from heat.

Stir in graham cracker crumbs until fully combined. Press mixture evenly into the bottom of the prepared pan to form the crust.

In a mixing bowl, beat softened cream cheese until smooth. Add the egg, sweetened condensed milk, vanilla extract, and salt. Beat until fully blended.

Pour cream cheese mixture over the crust and spread evenly.

Bake for 25–30 minutes, or until the center is set and the top is lightly golden.

Cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing into bars.
Notes
For extra texture, sprinkle chopped nuts or crushed butterscotch chips on top before baking.
Bars are easiest to slice when well-chilled.
Store in an airtight container in the refrigerator for up to 5 days.
