Description

Rich, creamy cheesecake bars with a buttery graham cracker crust and sweet, indulgent butterscotch flavor throughout — the perfect handheld treat for any dessert lover!


Ingredients

  • 11 oz butterscotch chips

  • ½ cup unsalted butter

  • 2 cups graham cracker crumbs

  • 8 oz cream cheese, very well softened

  • 1 large egg

  • 1 (14 oz) can sweetened condensed milk

  • 2 tsp vanilla extract

  • ½ tsp salt


Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch or 9×9-inch baking pan with parchment paper.

  • In a saucepan over low heat, melt butterscotch chips and butter, stirring until smooth. Remove from heat.

  • Stir in graham cracker crumbs until fully combined. Press mixture evenly into the bottom of the prepared pan to form the crust.

  • In a mixing bowl, beat softened cream cheese until smooth. Add the egg, sweetened condensed milk, vanilla extract, and salt. Beat until fully blended.

  • Pour cream cheese mixture over the crust and spread evenly.

  • Bake for 25–30 minutes, or until the center is set and the top is lightly golden.

 

  • Cool completely at room temperature, then chill in the refrigerator for at least 2 hours before slicing into bars.

Notes

For extra texture, sprinkle chopped nuts or crushed butterscotch chips on top before baking.

Bars are easiest to slice when well-chilled.

Store in an airtight container in the refrigerator for up to 5 days.
