Description

These Blackstone Loaded Smashed Potatoes are crispy on the outside, tender on the inside, and loaded with gooey cheddar cheese and savory bacon bits. Seasoned with garlic and sea salt, and finished with optional sour cream and fresh herbs, they make the ultimate comfort food side dish or snack.


Ingredients

  • 2 pounds baby potatoes

  • 2 tablespoons butter

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon sea salt

  • 1 cup shredded cheddar cheese

  • ½ cup bacon bits

Optional Toppings:

  • Sour cream

  • Chopped fresh parsley or chives


Instructions

  • Boil baby potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.

  • Preheat oven to 425°F (220°C).

  • Place potatoes on a baking sheet lined with parchment paper. Using a potato masher or the bottom of a glass, gently smash each potato to flatten slightly.

  • In a small bowl, mix melted butter, olive oil, garlic powder, and sea salt. Brush or drizzle this mixture evenly over the smashed potatoes.

  • Bake for 20 minutes until edges are crispy.

  • Remove from oven, sprinkle shredded cheddar cheese and bacon bits over potatoes. Return to oven and bake for another 5-7 minutes until cheese is melted and bubbly.

 

  • Garnish with sour cream and chopped fresh parsley or chives if desired. Serve warm.

Notes

For extra crispiness, broil for 1-2 minutes after adding cheese and bacon.

Substitute bacon bits with cooked crumbled bacon if preferred.

These can also be made on a grill or Blackstone griddle.
