For the BBQ Beer Marinade and Chicken:

  • 1/2 cup of your favorite beer

  • 3/4 cup ketchup

  • 1/2 cup honey

  • 2 teaspoons Dijon mustard

  • 2 teaspoons Worcestershire sauce

  • 2 teaspoons chipotle chili powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • Kosher salt, to taste

  • 2 pounds boneless skinless chicken breasts, cut into bite-size chunks

For the Corn and Feta Salsa:

  • 12 jalapeños, seeded and chopped

  • 2 cups grilled or steamed corn

  • 1/3 cup fresh cilantro, chopped

  • 1/4 cup fresh basil, chopped

  • 2 tablespoons lime juice

  • 1 tablespoon lemon juice

  • 1 tablespoon apple cider vinegar

  • 1/3 cup crumbled feta cheese

  • Whipped or mashed avocado, for serving


Instructions

  1. In a large bowl, whisk together beer, ketchup, honey, Dijon mustard, Worcestershire sauce, chipotle chili powder, smoked paprika, garlic powder, and kosher salt to create the marinade.

  2. Add chicken chunks to the marinade and mix well to coat. Cover and refrigerate for at least 2 hours, preferably overnight.

  3. Prepare the corn and feta salsa by combining jalapeños, corn, cilantro, basil, lime juice, lemon juice, apple cider vinegar, and crumbled feta in a bowl. Mix gently and refrigerate until ready to serve.

  4. Preheat grill to medium-high heat. Thread marinated chicken onto skewers.

  5. Grill chicken skewers for 10-12 minutes, turning occasionally, until cooked through and slightly charred on the edges.

  6. Serve skewers topped with the corn and feta salsa and a dollop of whipped or mashed avocado.

Notes

Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.

Adjust chipotle chili powder and jalapeños for desired spice level.

This recipe works well with chicken thighs for a juicier result.
