For the Chicken Skewers:

  • 1/2 cup of your favorite beer

  • 3/4 cup ketchup

  • 1/2 cup honey

  • 2 teaspoons Dijon mustard

  • 2 teaspoons Worcestershire sauce

  • 2 teaspoons chipotle chili powder

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • Kosher salt, to taste

  • 2 pounds boneless skinless chicken breasts, cut into bite-sized chunks

For the Corn and Feta Salsa:

  • 12 jalapeños, finely chopped (adjust for spice preference)

  • 2 cups grilled or steamed corn (fresh or frozen)

  • 1/3 cup fresh cilantro, chopped

  • 1/4 cup fresh basil, chopped

  • 2 tablespoons lime juice

  • 1 tablespoon lemon juice

  • 1 tablespoon apple cider vinegar

  • 1/3 cup crumbled feta cheese

  • Whipped or mashed avocado, for serving


Instructions

  1. Make the Marinade:
    In a large bowl, whisk together beer, ketchup, honey, Dijon mustard, Worcestershire sauce, chipotle chili powder, smoked paprika, garlic powder, and a pinch of kosher salt.

  2. Marinate the Chicken:
    Add chicken pieces to the marinade, cover, and refrigerate for at least 1 hour (or up to overnight for maximum flavor).

  3. Prepare the Salsa:
    While the chicken marinates, mix grilled or steamed corn, jalapeños, cilantro, basil, lime juice, lemon juice, and apple cider vinegar in a bowl. Fold in crumbled feta just before serving.

  4. Grill the Chicken:
    Preheat your grill to medium-high. Thread the marinated chicken onto skewers. Grill for about 10–12 minutes, turning occasionally, until cooked through and lightly charred.

  5. Serve:
    Plate the skewers with a generous spoonful of corn and feta salsa and a dollop of whipped or mashed avocado. Garnish with extra herbs if desired.

Notes

This marinade works great for tofu or portobello mushrooms if you want a vegetarian option.

Add grilled pineapple chunks to the skewers for a tropical twist.
