Ingredients
For the Chicken Skewers:

1/2 cup of your favorite beer

3/4 cup ketchup

1/2 cup honey

2 teaspoons Dijon mustard

2 teaspoons Worcestershire sauce

2 teaspoons chipotle chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

Kosher salt, to taste

2 pounds boneless skinless chicken breasts, cut into bite-sized chunks
For the Corn and Feta Salsa:

1–2 jalapeños, finely chopped (adjust for spice preference)

2 cups grilled or steamed corn (fresh or frozen)

1/3 cup fresh cilantro, chopped

1/4 cup fresh basil, chopped

2 tablespoons lime juice

1 tablespoon lemon juice
-
1 tablespoon apple cider vinegar

1/3 cup crumbled feta cheese

Whipped or mashed avocado, for serving
Instructions

Make the Marinade:
In a large bowl, whisk together beer, ketchup, honey, Dijon mustard, Worcestershire sauce, chipotle chili powder, smoked paprika, garlic powder, and a pinch of kosher salt. -
Marinate the Chicken:
Add chicken pieces to the marinade, cover, and refrigerate for at least 1 hour (or up to overnight for maximum flavor). -
Prepare the Salsa:
While the chicken marinates, mix grilled or steamed corn, jalapeños, cilantro, basil, lime juice, lemon juice, and apple cider vinegar in a bowl. Fold in crumbled feta just before serving. -
Grill the Chicken:
Preheat your grill to medium-high. Thread the marinated chicken onto skewers. Grill for about 10–12 minutes, turning occasionally, until cooked through and lightly charred. -
Serve:
Plate the skewers with a generous spoonful of corn and feta salsa and a dollop of whipped or mashed avocado. Garnish with extra herbs if desired.
Notes
This marinade works great for tofu or portobello mushrooms if you want a vegetarian option.
