Description

These delightful banana pancake dippers feature ripe bananas coated in a fluffy pancake batter, then pan-fried to golden perfection. Served with melted chocolate for dipping, they make for a fun and delicious breakfast or snack.


Ingredients

For the Pancake Batter:

  • 1½ cups all-purpose flour

  • 1 tablespoon baking powder

  • 2 tablespoons packed brown sugar

  • 1 teaspoon kosher salt

  • ¾ cup whole milk

  • ½ cup sour cream

  • 2 large eggs

  • 1 teaspoon pure vanilla extract

For the Dippers:

  • 3 bananas, halved and sliced lengthwise

  • 1 tablespoon butter

  • Melted chocolate, for dipping


Instructions

Prepare the Pancake Batter: In a large bowl, whisk together the flour, baking powder, brown sugar, and salt. In a separate bowl, whisk together the milk and sour cream, then add the eggs one at a time, stirring in the vanilla extract. Combine the wet and dry ingredients, mixing until just combined.

Cook the Dippers: In a large skillet over medium-low heat, melt the butter. Dip each banana slice into the pancake batter, ensuring it’s fully coated. Place the dipped bananas in the skillet and cook until golden brown, about 2 minutes per side

Serve: Remove the dippers from the skillet and drain on a paper towel-lined plate. Serve immediately with melted chocolate for dipping

Notes

For a healthier twist, consider using whole wheat flour or adding a sprinkle of cinnamon to the batter.

These dippers can also be prepared in an air fryer. Line the basket with parchment paper, grease with cooking spray, and cook at 350°F until golden, about 16 minutes.
