Description

A light, fluffy, and protein-packed baked egg dish with creamy cottage cheese, melty cheddar, and a fresh pop of chives. Perfect for meal prep or a nourishing, low-carb breakfast.

Ingredients

Scale
  • 12 large eggs

  • 1 cup 2% cottage cheese

  • ½ teaspoon sea salt

  • ¼ teaspoon cracked black pepper

Toppings:

  • ½ cup shredded cheddar cheese

  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Lightly grease an 8×8-inch baking dish or similar size.

  3. In a large bowl, whisk together eggs, cottage cheese, salt, and pepper until well combined.

  4. Pour the egg mixture into the prepared baking dish.

  5. Sprinkle cheddar cheese evenly over the top.

  6. Bake for 25–35 minutes, or until the eggs are set in the center and the top is lightly golden.

  7. Let rest for 5–10 minutes before slicing.

  8. Garnish with chopped fresh chives and serve.

Notes

Add-ins like cooked spinach, mushrooms, or bell peppers work great—just make sure they’re cooked and drained.

You can use full-fat cottage cheese for a creamier result.

Stores well in the fridge for 3–4 days. Reheat in the microwave or oven.
