Description

This Air Fryer Hibachi Chicken & Vegetables recipe brings your favorite Japanese steakhouse flavors right to your kitchen — in under 30 minutes! Juicy chicken, tender zucchini, yellow squash, and mushrooms are tossed in a savory soy-garlic sauce with a hint of sesame oil and air-fried to perfection. A healthy, high-protein meal that’s easy enough for busy weeknights and delicious enough to impress!


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 zucchini, thinly sliced and quartered

  • 1 yellow squash, thinly sliced and quartered

  • 1 cup white button mushrooms, quartered

  • 1½ tablespoons olive oil (or other mild cooking oil)

  • 2 tablespoons soy sauce (adjust to taste)

  • 1 tablespoon rice vinegar

  • 1 teaspoon sesame oil

  • 1 teaspoon minced garlic

  • ½ teaspoon garlic powder

  • Salt & pepper, to taste


Instructions

  1. Preheat the air fryer to 375°F (190°C) for 3–5 minutes.

  2. Prepare the marinade:

    • In a large bowl, combine olive oil, soy sauce, rice vinegar, sesame oil, minced garlic, garlic powder, salt, and pepper.

  3. Add ingredients:

    • Toss chicken pieces and chopped vegetables in the sauce until fully coated. Let marinate for 10–15 minutes (optional for extra flavor).

  4. Air fry:

    • Place chicken and vegetables in the air fryer basket in a single layer (cook in batches if necessary).

    • Air fry for 10–12 minutes, shaking the basket halfway through, or until chicken is cooked through and vegetables are tender with crispy edges.

  5. Serve:

    • Serve hot with rice or noodles and optional yum yum sauce on the side.

Notes

Add a drizzle of teriyaki or sriracha for extra flavor.

Want it saucier? Serve with extra soy or a homemade hibachi-style sauce.

Don’t overcrowd the air fryer basket — cook in batches if needed for even browning.
